Half day hands-On Cooking classes
We have all types of cooking courses focused on Tuscan specialities, pizza and and focaccia, pasta making, fish and seafood, risottos, to cover all aspects of the italian cuisine… Classes are for everyone – beginners, children, and professionals – and are held in perfect English. They are hands-on, fun and educational. We discuss ingredients, techniques, culture and the culinary arts in general. The price includes the instruction, cooking materials and the meal with wine. Guests are also invited to accompany the chef to the market the morning before the class; a two-hour trip is an additional € 20. Reservations and a deposit for courses are requested.

Our Cooking Classes
The Main Ingredients and Sauces Class
This class is very important to understand the bases of the Cucina Italiana, we start with a lesson on the origins of the Cucina italiana and the main ingredients used, we also smell and taste fresh herbs used in italian cooking to form a catalog in your palate. It is follwed by an Extravirgin Olive Oil seminar, explaining how extravirgin olive oil is made, we will taste a dozen different olive oils to recognize the differences according to where they are produced. We will then start cooking some of the most important sauces of northern Italian cooking. Have a light breakfast! because we will make 14 recipes and we will taste all of them.

The Tuscan Cooking Class
Hands on tuscan cooking class about typical Tuscan Cuisine, we will make crostini ai fegatini, crostini alle melanzane, al pomodoro, Panzanella: the famous tuscan bread salad. We will hand make the local vegetable ravioli and a delicious aromatic meat ragù from Lucca with unusual spices, for main dish Arista di Maiale: loin of pork with typical tuscan herbs. The Fish and seafood Class
This class takes the mystery out of cooking fish, I recommend the market trip. We will make 4 seafood appetizers, includig tuna tartare, 3 seafood pasta among which one of my very favorites: Shrimp and pistachio pasta! for main course Seabass mediterranean style and grilled tuna in a special sauce, for dessert : Panna Cotta! The pizza, focaccia and bread class
An entertaining class for all the family! The art of making the perfect pizza dough … Focaccia and bread dough. We will make all the favorites: pizza margherita, pizza amatriciana, pizza pepperoni, pizza funghi, pizza al prosciutto crudo, pizza with anchovies and olives, etc. Learn also 2 types of focaccia, ….and to finish Dessert Pizza!

Fresh Pasta and Pasta Sauces Class, also ravioli and gnocchi
Another Class fun for all the family!! we will make different types of pasta, white, green, red, and black pasta, we will make 2 ravioli fillings and 4 sauces, a fresh cherry tomato sauce, a basic tomato sauce, a ragù alla bolognese, amatrician sauce, alfredo sauce, a spicy mozzarella and tomato sauce etc… we will make 2 ravioli fillings and make ravioli with the pasta and filling, after that…A Tavola! let’s sit at the table and enjoy the good work!

The Vegetarian Cooking Class!
A class for our vegetarian friends! This class can be made also totally vegan on request! In this class we will learn some elegant and delicious dishes that are the envy of non vegetarians! There are many delicious ingredients we can use: truffles, porcini mushrooms, wine, balsamic vinegar, extravirgin olive oils and many fresh vegetables and fruits always available, delicious, healthy and inexpensive!! Not to forget hasel nuts, pistachios, and last but not least…chocolate! We will prepare a number of sauces to serve with pasta and risotto. We will prepare compbinations of beans, lentils, rice, pasta and spelt, to make complete proteins. We will also learn how to make “Seitan” a wheat protein obtained from flour, which is boiled in vegetable stock and can then be used with a number of sauces normally served with meat. Other dishes will b made with porcini, Tou-Fu, red wine balsamic vinegar reduction and truffle oil. We will finish off with a couple of desserts made using no animal fats!

Cooking Classes are available by reservation every day of the year, from 10,00 am to 2,30 pm. Afternoon classes on request
