A culinary secret even to Italians outside this small city until approximately 20 years ago, authentic Balsamic vinegar is made from local grapes and aged for at least 12 years in special wooden barrels. The vinegar is frequently aged much longer, even surpassing 25 years in aging barrels! The secrets of authentic Balsamic vinegar have been passed down by local women for generations, and the aging barrels were so valuable they were included in a bride’s dowry. After visiting an acetaia (Balsamic vinegar maker) and tasting the delicious, sweet, tangy flavors, you will enjoy a delicious meal either at the acetaia or a traditional trattoria.
